How to Store Caviar & Keep It Fresh

Quick answer

Store caviar sealed in the coldest part of your fridge, never freeze it, and open the tin only when you are ready to serve — Crown Caviars delivers every tin refrigerated, with tins from AED 525 per 50g.

Caviar is a fresh, delicate product, and how you handle it after delivery decides how good it tastes. Here is how to store it at home in Dubai or anywhere in the UAE, and what to do once the tin is open.

Refrigerate straight away

Caviar travels and rests in an unbroken cold chain, so the moment your order arrives, move the tin into the fridge. Crown Caviars dispatches every tin refrigerated, and keeping it cold from that point on protects the texture and flavour.

Place the tin in the coldest part of the fridge, towards the back, rather than in the door where the temperature swings every time it opens.

Keep it sealed until you serve

Leave the tin closed and undisturbed until you are ready to enjoy it. Opening it early exposes the roe to air and warmth, which dulls the taste and softens the pearls.

Check the label on your tin for the best-before guidance and storage instructions, and follow those over any general rule.

Avoid freezing and warmth

Do not freeze caviar. Freezing can damage the delicate pearls and change their texture. Equally, avoid leaving the tin on the counter or in a warm car — heat is the quickest way to spoil the experience.

If you are entertaining, serve the tin over a bowl of crushed ice so it stays chilled at the table, and return any remainder to the fridge promptly.

Once the tin is open

Open caviar is best enjoyed soon after opening. If you have some left, press cling film gently over the surface, close the tin or move it to a small airtight container, and return it to the fridge.

Use a mother-of-pearl spoon (from AED 80) rather than metal when serving, and avoid stirring so the pearls stay whole.

Choose a tin size you will finish

Because open caviar is best enjoyed soon, match the tin to your guest list. The 50g tin (from AED 525) suits a tasting or a small gift, while 125g, 250g and larger tins up to 1kg suit entertaining and events.
